The original restaurant was run for 15 years, until 2012, by a chef who was quite serious about the authenticity of the food, how it was cooked and served and eaten. Unfortunately he had to quit due to health reasons. The original plan was that all the recipes were from the 13th and 14th centuries and nothing was served that did not exist during that time (obviously, not literally . He used local fresh products, lovely lettuce and honey and amazing cheeses. And they did not serve coffee, which hadn 't been discovered yet. I am sure people missed having coffee after their meal but it was worth it. They now have Nespresso which as least is better than the usual French coffee. From what I read, the town decided that the restaurant, as it is part of the restored chateau, was such a good attraction that they wanted to keep it going. They searched for a new chef all over France. We ate here last year (2014 and there have been some more changes. It seems that they are cutting corners and the service is perfunctory. But not unfriendly. Something was missing I gave them 4 stars because it is still a fun occasion to eat at the chateau. And the food is not bad. But, I have to say that it is a little disappointing and I miss the old days. The restaurant space is quite pleasant a nice atmosphere, (I believe it was the original dining area for the chateau and I love the drapery hanging at the kitchen end of the room. The amuse bouche is a variety of tidbits: olives, artichoke hearts, some tapenade, raisins, nuts etc.. They serve everyone a glass (pottery cup of delicious spiced wine as an aperitif. Also a carafe of water and one of wine. In the past they asked what color wine but not anymore. Maybe it was just us... The long wooden tables are set with cloth napkins, a wooden spoon and a knife (my husband says he is bringing his own fork next time! One can eat with one 's hand depending on what is served. A new touch now they have a little fountain with towels to rinse off your hands. You are given a round bread trencher to eat on, rather than a plate. In the old days, once it was used and full of meat juice, you threw it to the dogs or distributed to the poor... We started with a slice of tourte. (pie My husband 's was meat (with giblets and mine was mushroom and vegetables which was very good. They serve a bit of lettuce on the side but it was disappointingly iceberg! I chose the fish menu this visit. (which they didn 't have last year It was served on a piece of slate rather than the trencher. It was fine.. the sauce with raisins was good. it came with rice.. 13th c ? I traded off with my husband who had the two roasted quail which were good. Served with turnips in a Cumin sauce and some very good stewed mushrooms. His was more the typical menu meat served with veggies (usually root . They have three menus at 35 euros and one at 42 euros which includes cheese.. plus a children 's menu, 16 euros, and some a la carte things, brochette of beef etc.... My husband 's dessert was a blanc manger with a red fruit coulis and some little almond cake balls. Mine was the dessert of the day which was good, even though I don 't know what it was.. a slice of custard pie with fresh fig, and a bowl of custard that tasted a lot like Italian cheesecake, with walnuts.. They give you a glass of (differently spiced Claret to end the meal. Lunch was fine not as satisfying as in the past but still a nice experience especially if one visits the chateau, which is very interesting. And maybe with children who are old enough to appreciate the subject of Cathars. The town and surrounding area are very picturesque.
