Here carbonara reaches perfection, bet it 's better than in most restaurants in Rome, capital of the Carbonara: : never overwhelming but tinged with decisive and top quality ingredients, it 's a little piece of heaven on earth. So was our beef tartare à la Paolo , where the top notch quality meat is hand-cut and seasoned with yolk, capers, anchovies, mustard seeds and other spices.
