I and my friend have been traveling in South America for 3 months and have experienced a variety of kitchens on this continent. We also had experience with many kitchens in Europe, my partner is Greek/Bulgarian and I Western European, we love our food and if it does not meet our standards that we are not to eat. This has made our trip in Ecuador and Peru difficult when eating food, especially for my girlfriend who has the sensitive stomach! When we found Aji Lima, owned by Jose Armando, we were overjoyed. He showed us his kitchen and I am still a clean place to see in South America, it was literally immaculate. The toilets are probably also the cleanest in the whole country! It is a small but relaxed atmosphere and Jose sets very pleasant music from all parts of the world... it was very welcoming indeed! From only two other employees who were as friendly and friendly, we enjoyed Ceviche (a Peruvian seafood dish with fish, only cooked by a chemical process of lemon, salt and chili) which was excellent. My girlfriend was initially hesitant with her delicate stomach, but she tried and quickly found it to be on her taste and it was done quickly. We also had the opportunity to taste a pasta dish with mixed seafood (Mariscos), which was just as delicious, although a little exotic than the Ceviche! We went for a third time for pescado a la plancha, I guess best described as grilled fish, with little oil. That was fantastic, he let us sample a few different fish that had very different flavors and textures, it was a pleasure. He told us that he went to the market very early in the morning to find the best quality fish when you ask, he is very happy to accompany it with some large South American vegetables. We are not big meat eaters, but it also offers lamb, chicken and goats. For strict vegetarians he also has salads on the menu and seems very flexible what he prepares. Jose explained to us that he studied in Valencia, Spain for 5 years and after preparing dishes in five star restaurants, but decided to go back to his home of Lima to work in a humble and relaxed environment, and I can only say the people in his neighborhood are very happy for this decision! The prices were very reasonable, locals and foreigners pay the same. Menu of the day is 16 soles, get a starter, main and dessert.
